Now that it's summer, you know what that means: BERRY SEASON
Berries have got to be one of the Earth's greatest treasures, but if I'm being honest with you, I've definitely been missing out on one of the very best ways to use all of the extra berries that I usually wind up with after I go berry picking... until now.
While deep in one of my Pinterest scrolls, I've discovered the most delicious- and I mean the most delicious recipe for blueberry muffins. Real simple, real good, and just what your recipe book is missing this summer.
Ingredients:
☼ 1/2 c softened butter
☼ 1 1/4 c sugar + more for topping
☼ 2 eggs
☼ 1 tsp vanilla extract
☼ 2 c flour
☼ 1/2 tsp salt
☼ 2 tsp baking powder
☼ 1/2 c milk
☼ 2 c fresh blueberries
How to:
Begin by preheating your oven to 400°. In a large bowl, beat together your butter and sugar until the mixture is creamed. Add in your eggs along with your vanilla extract and continue to beat until everything is well combined. Begin slowly alternating in your flour, salt, and baking powder mixture along with the milk until the batter is mixed and there are no lumps. Mix in 1/2 c of mashed blueberries, and then stir in the remainder with your spoon- leaving them full and plump. Grease or line your muffin tin and fill each cup half way and top the batter off with an extra sprinkle of sugar. Lower your oven to 375° and bake for 30-35 minutes, or until golden.
