Chunky Apple & Cinnamon Cake

This delicious cake is so easy to put together and smells amazing whilst cooking. You can use any apple variety you prefer, I used Royal Galas. I think it works so well with chunky apple pieces but of course you can cut smaller. I also did not remove the peel. If you want more of a crunchy top you can double the quantities for the topping.


INGREDIENTS

  • 210 grams plain flour

  • 2 tsp baking powder

  • 1/2 tsp baking soda

  • 1 tsp ground cinnamon

  • 150 grams sugar

  • 3 apples, chopped into chunks

  • 2 large eggs

  • 1 tsp vanilla extract

  • 120 ml vegetable oil

  • 20 ml Greek yogurt

Cinnamon & Oat Topping 50 grams soft brown sugar 30g rolled oats 1 tsp ground cinnamon 1 tbsp butter, melted Instructions

  1. Preheat oven to 180c (350f) standard / 160c(320f) fan assisted.

  2. Grease and line a round cake tin.

  3. In a bowl, add flour, baking powder, baking soda, cinnamon, and sugar. Add chopped apple and stir to coat apples in the dry mix.

  4. In a separate bowl, add eggs, vanilla, oil, and yogurt. Whisk until egg yolks are no longer visible.

  5. Add wet ingredients to dry ingredients and gently mix with a wooden spoon until combined. Pour batter into the lined tin.

  6. For the topping combine cinnamon, sugar, oats, and butter. Mix together until lumpy and wet. Sprinkle over the top of the uncooked cake.

  7. Bake cake until a skewer inserted into the middle comes out clean, approx 35-40 mins.

  8. Transfer cake to a wire rack to cool completely.

Enjoy with a scoop of ice cream, cream, or on its own with a cup of tea!!
